The assamica tea plant, which originated from India, is more typically used in China for Pu-erh tea cake production while other assam loose leaf teas would use a hybrid of the assamica and other tea plants. This tea, however, is pure assamica, and includes both leaves and buds. The Ning'er village in Yunnan processes the leaves and buds and the withering and roasting gives the white buds their signature golden color. By including the buds, this assam gains a more floral sweetness that almost resembles orange blossom, but is balanced with the roasty chocolate and slight astringency typical of assamica leaves. This makes it an appropriate choice for milk tea as well!
This tea evokes the feeling of pulling the blankets up to your chest before you snuggle in to sleep, there is a feeling of comfort and sweetness that is very familiar but you will continue to look forward to.
We recommend brewing this tea at 90°C for short steeps (45s - 1min) to avoid strong astringency or bitterness while bringing out its natural floral and malty flavors, and increasing brew time as you steep. All our teas can be steeped multiple times, so please enjoy your brew for as long as you want.
